Pumpkin Spice Sugar Cookies

2 1/4 cups flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup (1 stick) butter, softened
1 cup sugar
1 egg
1/4 cup (4 creamer singles) International Delight® Pumpkin Pie Spice, or any I.D. flavor
1 tsp vanilla extract

Whisk together flour, baking powder and salt. In a separate bowl, cream butter and sugar. Add egg, International Delight and vanilla. Beat well. Stir in flour. Divide dough into two discs and cover in plastic wrap. Chill for 1+ hours.

Preheat oven to 350° F.

Grease or line cookie sheets with parchment paper. Roll dough to 1/4-inch thickness on a lightly floured surface. Cut out shapes with cookie cutter and place on cookie sheet. Refrigerate cookie sheet for 10 minutes. Bake 10-12 minutes. Cool and decorate.

Yield 3-4 dozen cookies, depending on size of cookie cutters.
