Instructions

  1. Whip heavy whipping cream until soft peaks form, then add ½ cup creamer and spices, mixing until combined. Stir in 1 tsp vanilla and set aside.

  2. In a large bowl, beat 5 eggs until combined. Add remaining ½ cup creamer, 2 tsp vanilla and water, whisking to combine. Whisk in butter.

  3. In a separate bowl, combine flour, sugar and salt. Stir wet egg mixture into dry ingredients, mixing just until combined.

  4. Spray skillet with cooking spray and cook about ¼ cup of batter at a time over medium heat. Cook for about 2 minutes on each side.

  5. Layer stacked crepes with heavy whipping cream mixture, then refrigerate overnight. Top with additional cinnamon and nutmeg before serving slices.

  • 3 cups heavy whipping cream
  • 1 cup International Delight Pumpkin Pie Spice Coffee Creamer,* divided
  • 1 tsp nutmeg
  • 2 tsp ground ginger
  • 2 tsp cinnamon
  • 1 tsp salt
  • 3 tsp vanilla extract, divided
  • 5 eggs
  • 1 cup milk
  • 1 1/2 cups water
  • 4 1/2 Tbsp butter, melted
  • 2 1/4 cups flour
  • 3/4 cup sugar
  • 1 tsp salt
