Prepare bunny molds with 1/4 tsp sprinkles in each cavity.
Place white chocolate and creamer into microwave-safe bowl. If you want to add extract here, add 1/4 tsp. Melt in 30-second intervals until smooth.
Add several drops of food coloring and stir. Keep adding until desired color is reached.
Use a spoon or piping bag to fill each cavity mold. Lightly tap mold against table several times to release any bubbles.
Place in fridge for at least an hour.
Remove bunnies from molds and let them come to room temperature before serving.
